History of the Guinea Pig Fish Restaurant
The restaurant was first opened in 1957 where it was soon the established haunt of the locals and the stars of screen filming in Ardmore Studios in Bray. Regular stars were John Wayne, Maureen O'Hara, John Ford & Peter Ustinov.

The Restaurant was bought by the Stewart Family in 1978. The tradition continues today. Regulars now include Hugh Leonard, Maeve Binchey, Enya, Lisa Stanfield, Bono, The Edge, Liam Neeson, Sir Cliff Richard, Meryl Streep & many more.

What attracts them is the timeless atmosphere and consistent good food prepared by Mervyn Stewart (chef de Cuisine) and his staff and equally courteous service supervised by his wife Florence, daughter Eimile and assisted by Manager Kevin, with
Head Chef:- Barry Dunne.

The Guinea Pig Restaurant is situated in the medieval, heritage town of Dalkey, home to the rich and famous of Sport, Stage and Screen. Walk along the coast to Bulloch and Coliemore Harbour's, once the main ports of Dublin. Visit the Heritage Centre and soak up the atmosphere of this unique of towns with its written history traced back to 727 ad.

ownership of the Stewart Family
